Meatball curry with rice tafel - day two

  •  wholegrain rice
  •  leftover meatball curry
  • apple
  • 0.5 red bell pepper
  • 50 gramspeanuts
  • 20 gramscoconut flour

Yay! Today's an easy one. Simply heat up yesterday's belting meatball curry, cook some rice, and chop a few more toppings - and dinner's served. Enjoy!

Directions

1. Cook the rice according to the packet. Heat up yesterday's meatball curry in the microwave, or in a pot on the stove.

2. Finely dice rinsed apple and bell pepper, and place into small separate bowls along with peanuts and coconut flour.

3. Serve the piping hot rice with warm meatball curry and fresh toppings.

4. Enjoy!

Tip

Tasks for kids in the kitchen: Let your kids help dice apple and bell pepper. They could also set the table..!
