Pitas are an easy and delicious dinner, and they can be filled with whatever the family is in the mood for. Here we've used leftovers from our Mexican quinoabake and lots of veg. Enjoy!
Directions
1. Heat the leftovers from yesterday's quinoabake on the stove or in the microwave.
2. Rinse, peel and clean the veggies. Shred the lettuce into smaller pieces, slice tomatoes and cucumber and cut carrots and peppers into sticks for snack veggies. Pop everything on the table along with the leftover quinoabake.
3. Warm the pitas in a toaster, or give them about 30 seconds in the microwave.
4. Let everyone assemble their pita exactly how they like it.
5. Enjoy!
