Virgin piña colada

Ingredients

( 2 adults and 2 kids )

  • 350 gramspineapple slices
  • 200 mlcoconut milk
  • 10 ice cubes
  • lime
  • 1 tbspsyrup
  • 0.5 tspfood colouring
  • 50 gramssugar

It's really lovely for the kids to have something a bit special in their glass when toasting a special occasion. Here's a tropical piña colada with pineapple, coconut milk and lime (sans rum!). Enjoy!

Directions

1. Pour the juice from the pineapple into a blender. Add half of the pineapple rings and blend with coconut milk, ice cubes and the juice of a lime - or use a hand blender in a jug.

2. Blend on full whack until you have a smooth, lump free liquid.

3. Mix syrup and food colouring in a deep plate. Pour sugar into a separate deep plate. Use four glasses, and first dip the rim in syrup, then in sugar, to get a gorgeous crystal rim.

4. Pour piña colada into the glasses, and garnish with the remaining pineapple rings - and it's time to say cheers.

Tip

Tasks for kids in the kitchen: Your kids can just about make this drink all on their own. Let them mix coconut milk and pineapple. They can also do the lovely sugar rims on the glasses.

When buying tinned pineapple, it will say the drained weight as well as the weight including juice. In this case, you'll need the full contents of the tin, including the juice.
