Ingredients

- 400 gramspotatoes
- 300 gramscarrots*
- 1 onion
- 1 canchickpeas
- 500 mlwater
- 400 mlcoconut milk
- 3 tspred curry paste
- 6 kaffir lime leaves
- 100 gramsfresh spinach*
- soy sauce
- salt
- olive oil

Chickpeas have a mild flavour, that many kids - believe it or not - like. And this vegetarian dish goes down a treat with both kids and adults in our house. The chickpeas are joined by potatoes, lime leaves, carrots, coconut milk and fresh spinach leaves. Enjoy!
Directions
1. Peel potatoes and carrots and cut into smaller pieces. Peel and dice the onion. Cook the onion in olive oil and add potatoes and carrots after a few minutes.
2. Add drained chickpeas from the can, water, coconut milk, curry paste and lime leaves. Let the lot simmer for about 20 minutes - until the potatoes are tender. Mix the fresh spinach leaves into the dish.
3. Add soy saucwe to taste and add a bit of salt if needed.
4. Serve the dish with fresh herbs, if you have some to hand.
5. Enjoy!
Tip
Tasks for kids in the kitchen: Let your kids peel and cut the potatoes and carrots. If you like fresh coriander, it goes great with this dish.
