Vegetable pancakes with spinach and bell peppers

Ingredients

( 10 small pancakes )

  • 300 gramsfrozen spinach*
  • red bell pepper
  • egg
  • 100 mlrye flour
  • 2 tbspplain flour
  • 1 tspsalt
  •  olive oil
  •  butter

These vegetable pancakes are super easy to make, and our kids loved them. They're perfect for packed lunches or as a side for dinner. Enjoy!

Directions

1. Thaw the spinach in a pot or microwave oven. Rinse the bell pepper and remove the seeds. Blend both with eggs in a mini chopper or blender.

2. Add rye flour, plain flour and salt.

3. Cook the pancakes in butter over medium heat on a teflon pan - you can fit about 4 pancakes on a pan.

4. Serve as a side with dinner or as a snack in packed lunches.

5. Enjoy!

Tip

Tasks for kids in the kitchen: Let them rinse the bell pepper and remove the seeds.
