Vanilla fluff for ice cream cones

  • 50 mlwater
  • 150 gramssugar
  • 80 gramspasteurised egg whites
  • 1 tbspvanilla sugar

The Danes are onto a belter with this one – topping a scrumptious ice cream cone with a good helping of sweet, sugary fluff. Just divine! Here's an easy and delicious recipe for vanilla fluff – super tasty. Enjoy!

Directions

1. Add water and sugar to a pot, and warm up while stirring until the sugar crystals have dissolved and you have a syrup – this takes about 5-7 minutes. Refrigerate the syrup to cool.

2. Whisk the egg whites stiff with a hand mixer.

3. Once the syrup is cool, add little by little to the stiff egg whites, while whisking the best you know. Whisk for 8-10 minutes until the foam is stiff, and finally add vanilla sugar. Have a taste, and add more vanilla if needed.

4. If you'd like flavoured fluff, like a classic strawberry for example, add a finely blended and lump free strawberry jam. Purchase a smooth jam or blend one smooth yourself.

5. Top the summer's ice cream cones with plenty of fluff.
