- wholegrain rice
- 1 onion
- 1 tbspcurry
- 400 gramschicken fillet
- 250 mlsingle cream 8%
- 2 cmfresh ginger
- 2 apples
- 1 tbspcorn flour
- 100 gramspeanuts
- 100 gramsdried apricots
- 1 banana
- 50 gramscoconut flour
- 1 red bell pepper
- olive oil

Rice tafel may be a somewhat forgotten 80's classic - but it's a definitely hit both weeknights and for (kids) parties. Apart from being super tasty, it's also a fun time to assemble your own dish at the table. So bring the kids into the kitchen with you - they love helping with the chopping and cutting. Enjoy!
Directions
1. Cook the rice according to the packet.
2. Dice the onion and sautée along with the curry in some olive oil. Cut the chicken into bite-sized chunks and remember to wash your hands and utensils when you're done. Let the chicken cook along with the onion and curry, and add single cream once the chicken is seared some.
3. Peel ginger and half the apples, grate both on the fine side of a grater and add to the sauce. Thicken the sauce with some corn flour stirred into water, and season with salt and pepper.
4. Dice the rest of the apples and the sides the way you like and place everything on the table in small bowls along with chicken and rice. Then everyone can put together their favourite plate.

Tip
There's almost no limit to what you can use as topping on a rice tafel. Like peas, pickled fruits, spring onion, raisins, etc.
