Raspberry meringue kisses

Meringue kisses are dead simple to make, and only contain five ingredients. We've made these with raspberries, and they come out crispy on the outside and wonderfully chewy inside. Eat them as they are, or use as topping on cakes or ice cream - they're super decorative. Enjoy!

Directions

1. Preheat your oven to 120 degrees convection.

2. Add water, sugar, vanilla sugar and frozen strawberries in a pot and heat while stirring, until the sugar crystals dissolve and you have a syrup - this takes about 5-7 minutes. Strain the syrup through a sieve to get rid of the raspberry seeds. Then pop the syrup in the fridge.

3. Whisk the egg whites stiff in a glass or metal bowl. Once the syrup is cool, add it little by little to the egg whites while whisking on full speed. Avoid hitting the sides of the bowl with the syrup. Whisk for about 8 minutes, until the foam is stiff.

4. Move the foam to a piping or freezer bag – with a star tip, if you have one. Pipe small peaks onto the oven sheet lined with baking parchment and bake for about 60 minutes, until golden.

5. Leave the meringue kisses to cool, then munch away! Should you have any left over, store in an airtight container.

Tip

Tasks for kids in the kitchen: Let your kids help whisk the egg whites stiff, and pipe the kisses onto the sheet pan.
