Raspberry and lemon buttermilk koldskål
( 2 adults and 2 kids )
- 6 pasteurised egg yolks
- 2 tbspvanilla sugar
- 0.5 lemon
- 60 gramssugar
- 1 litrebuttermilk
- 250 gramsraspberries

Koldskål is delicious! A classic Danish summer treat, koldskål (literally "cold bowl") is lemon and vanilla flavoured buttermilk, served cold and with biscuits for a delicious summer snack or dessert. The raspberry is a bit of a new addition, but if it's even possible, even more delicious. And the best part? It takes no more than 10 minutes to make. Velbekomme!
1. Whisk egg yolks, vanilla sugar, lemon zest and sugar really well in a bowl. Then add buttermilk.
2. Add the raspberries and now blend it all together with a hand blender, until the colour is lovely and pink, and there are no lumps left.
Tasks for kids in the kitchen: Let your kids help pour the ingredients into the bowl and whisk everything together. They of course make perfect tasters, too!
IMPORTANT: If you are using frozen raspberries you have to cook them for at least one minute and cool them down before using them in the recipe.
