Quick pulled chicken in buns

Ingredients

( 2 adults and 2 kids )

  • 350 gramschicken fillet
  • onion
  • 200 mlketchup
  • 2 tbspbrown sugar
  • 25 mlvinegar
  • 0.5 tbspall purpose seasoning
  • hot dog buns
  • 300 gramscarrots*
  • 0.5 cucumber
  • 10 cherry tomatoes
  •  iceberg lettuce
  •  garlic mayo
  •  olive oil
  •  salt
  •  pepper

You might have tried pulled pork, the super tasty American classic - and pulled chicken is just as tasty! Unfortunately it takes hours and hours to make the proper version, so we've developed a version that takes no time at all to make, and is perfect for busy families with young kids. Try it for yourself!

Directions

1. Boil the chicken fillets in a pot of salted water for about 20 minutes, until they're cooked through and the meat white - not pink - all the way through. You can butterfly the fillets before you cook them if you want things to happen a bit quicker. Leave to cool.

2. Finely chop the onion and cook in some olive oil on medium heat, until browned. Add ketchup, brown sugar, vinegar and all purpose seasoning and stir well. Now shred the cooked chicken fillets very finely with your hands or a fork and add it to the marinade. Let simmer while stirring for about 5 minutes, or until the marinade has cooked down enough to cling to the meat. Be careful not to reduce it too much though, as it'll dry out the meat a bit. Season with salt and pepper.

3. Warm the hot dog buns in the oven or on a toaster. Cut the peeled carrots and cucumber into sticks for snack veggies and serve with the hot dog buns filled with lettuce and pulled chicken, and topped with sliced cherry tomatoes and garlic mayo.
