- wholegrain rice
- 300 gramsfrozen peeled prawns
- 1 onion
- 1 courgette
- 2 red bell pepper
- 250 gramsmushrooms
- 1 tspcurry
- 1 tspcumin
- 0.5 tbsppaprika- ideally the sweet kind
- 1 canchopped tomatoes
- 70 gramstomato purée
- 1 cubevegetable stock
- 100 mlwater
- 200 mlsingle cream
- olive oil
- salt
- pepper

A super easy and quick dish with prawns and warm spices. Bring the kids into the kitchen with you and have them help you chop, stir and taste. Enjoy!
Directions
1. Boil the rice according to the packet, and de-frost the prawns.
2. Finely dice the onion. Wash the courgette and cut into half slices. Wash the bell peppers, remove the seeds and cut into strips. Wash and halve the mushrooms.
3. Sautée the onion with some olive oil in a pan. Add courgette and bell peppers and cook for another few minutes. Finally add mushrooms, prawns, curry, cumin, some of the paprika, chopped tomatoes, tomato purée, stock cube and water. Let simmer for about 10 minutes, or until the veggies are tender, but not mushy.
4. Add the cream and season with salt and pepper, and add a bit more paprika and curry if you feel it's needed.
5. Enjoy!
