Pork in coconut curry with butternut squash, peanuts and apple – day two

Ingredients

( 2 adults and 2 kids )

  •  wild rice
  •  leftover pork curry
  • apples
  • 50 gramscashew nuts

Today's an easy one! Just heat up leftovers from yesterday's yummy pork curry and cook some fresh rice. Enjoy!

Directions

1. Cook rice according to the packet.

2. Heat up yesterday's leftover pork curry in the microwave or a pot. You may need to add a splash of water to the sauce. If you do, remember to add seasoning and curry to taste.

3. Wash apples and remove cores. Then cut up or dice.

4. Serve the warmed up leftovers with rice, apple chunks and cashews. Easy, innit?
