Pineapple pancakes with toasted coconut flour and syrup

  • 250 mlmilk
  • egg
  • 2 tbspsyrup
  • 200 gramsplain flour
  • 0.25 tspsalt
  • 1 tbspvanilla sugar
  • 1.5 tspbaking powder
  • 0.5 tspbaking soda
  • 340 gramspineapple slices
  • 100 gramscoconut flour
  •  butter
  •  syrup

We've whipped up a brand new version of classic American pancakes. We've cooked them with pineapple rings, and served them with toasted coconut flour on top. And we're not afraid to promise, they taste like you want more... Enjoy!

Directions

1. Whisk milk, egg and syrup in a bowl.

2. Add plain flour, salt, vanilla sugar, baking powder and baking soda and whisk well.

3. Drain the pineapple and pat dry on some kitchen roll or on a perfectly clean dishtowel.

4. Heat your best non-stick pan and melt a knob of butter. Once the butter is golden, pour a bit of batter onto the pan in little round dollops. Cook on medium heat for about one minute, then place a pineapple ring into each pancake. Let cook for a bit longer, then flip when ready and cook until done.

5. If you have more batter but no more pineapple rings, just make plain old delicious pancakes from the rest.

6. Toast coconut flour on a dry pan until lightly browned, and serve the pancakes with syrup, coconut flour, or whatever your heart desires as topping. Enjoy!

Tip

Tasks for younger kids in the kitchen: Let your kids help mix wet and dry ingredients and whisk the lot together. They can also practice flipping pancakes on the pan. If you're struggling to get the lumps out of the batter, use a hand blender. You can also add all the ingredients to a countertop blender, if you have one of those.
