Pesto with rocket

  • 75 gramspine nuts
  • 1 packetrocket- 75 grams
  • 150 mlolive oil
  • 1 clovegarlic
  • 50 gramsparmesan- or other hard cheese, e.g. pecorino
  •  salt
  •  pepper

Homemade pesto is super easy to make, and makes for a delicious addition to a whole host of dishes, or a tasty spread in a sandwich. Instead of basil, which can be a bit dear in large amounts, we've made this pesto with rocket. And it's a hit!


1. Roast the pine nuts on a pan, until they've gotten a bit of colour and are smelling amazing.

2. Blend all the ingredients to the desired consistency in a food processor or mini chopper. Season with salt and pepper and if needed, adjust the consistency with a bit of olive oil.


If you have leftover pesto, pop it into a container and top with a good dash of olive oil, to keep air from getting to the pesto. That way it'll last longer in the fridge - or frozen.
