One pot pasta with salmon

Ingredients

( 2 adults and 2 kids )

  • onion
  • 1 clovegarlic
  • courgette
  • tomato
  • 300 gramsfresh salmon
  • 300 gramsfrozen peas
  • 1 canchopped tomatoes
  • 200 mlsingle cream- or half cream
  • 1 tbspall purpose seasoning
  • 2 tbspred pesto
  •  fresh thyme- or dried
  • 400 gramswholewheat pasta
  • 1 litrewater
  • lemon
  •  salt
  •  pepper

Yay, another variation on the easy and delicious one pot pasta, where everything is cooked in one single pot! Here we've cooked the pasta with salmon and plenty of veg. It doesn't get easier, and the kids love it. Enjoy!

Directions

1. Chop onion and garlic. Rinse the courgette and roughly grate it. Rinse and dice the tomatoes.

2. Take the skin off the salmon and cut the meat into smaller chunks. Now add all the ingredients, barring lemon, salt and pepper, to a big pot and bring the lot to the boil.

3. Leave the spaghetti to stick out of the pot in the beginning, until it gets soft enough that it can be pushed into the boiling water with a light nudge. Pop the lid on, turn the heat down a bit and let everything simmer for about 15 minutes, until the pasta is cooked through.

4. Remember to carefully stir the bottom once the pasta has softened, so the meat and veg doesn't get stuck.

5. Season to taste with salt, pepper and some lemon juice, and serve in deep plates - optionally with a sprinkle of herbs on top, if you have that sort knocking about. Do avoid herb sprinkles for children younger than 3.
