Mexican potato pot with sweetcorn and avocado

  • 650 gramspotatoes
  • onion
  • 1 clovegarlic
  • 150 mlwater
  • 2 canchopped tomatoes
  • 70 gramstomato purée
  • 150 gramxloose sweetcorn
  • 1 tbspcurry
  • 0.5 tbspcumin
  • avocado
  • 200 mlcreme fraiche 9%
  •  salt
  •  pepper
  •  olive oil

This super easy potato pot is totally meat free - and tastes mildly of Mexico. It contains potatoes (you might've guessed!) and sweetcorn among other things, topped with avocado and creme fraiche. Enjoy!

Directions

1. Scrub or peel potatoes and cut into smaller chunks. Finely chop onion and garlic.

2. Sautée onion and garlic in some olive oil in a large pot.

3. Add potatoes, water, chopped tomatoes, tomato purée, drained sweetcorn, curry and cumin and bring the lot to the boil. Let simmer until the potatoes are tender and remember to stir as it bubbles away.

4. Season with salt and pepper and serve the dish with sliced avocado and creme fraiche on top. If you have palates in the family that are friendly with fresh coriander, that's a super yummy garnish for this dish. Enjoy!

Tip

Tasks for younger kids in the kitchen: Let your kids peel and cut up the potatoes.
