Melon salad with pointed cabbage, feta and toasted sesame seeds

Ingredients

( 2 adults and 2 kids )

  • 20 gramssesame seeds
  • 0.5 pointed cabbage
  • 0.5 watermelon
  • 1 bunchparsley
  • 0.5 organic lemon
  • 1 tspdijon mustard
  • 1 tbspsyrup
  • 3 tbspolive oil
  • 0.5 tspsalt
  •  pepper
  • 100 gramsfeta cubes

We've made a super yummy and summery salad with pointed cabbage, melon, feta, parsley and lemon dressing. It's especially great with barbecued food or other summery dishes. Enjoy!

Directions

1. Start by toasting the sesame seeds on a dry pan until they pop and brown - they can pop a bit enthusiastically, so maybe cover with a lid or tin foil. Leave to cool on a plate.

2. Chop pointed cabbage into thin strips. Dice the melon and finely chop the parsley.

3. Zest the lemon on the fine side of a grater, then press the juice into a bowl. Mix well with mustard, syrup, oil, salt and pepper. Whisk well and dress the salad. Add a bit more lemon juice if needed, if the lemon used was a bit lacking in juice.

4. Plate the salad in a tray and garnish with feta on top.

5. Enjoy!

Tip

Tasks for younger kids in the kitchen: Let your kids help dice the melon, mix the dressing and top with feta.
