Fried noodles with tofu and crispy veg

Ingredients

( 2 adults and 2 kids )

  • Tofu and noodles
  •  wholewheat noodles
  •  sesame seeds
  • 250 gramstofu
  • 2 tbspsoy sauce
  • 2 tbspsweet chilli sauce
  • red bell pepper
  • 0.5 headcauliflower
  • onion
  • 1 clovegarlic
  • 150 gramssugarsnap peas
  • 100 gramsbean sprouts

Tofu is made from soy beans, and is akin to a firm cheese with loads of protein. It's crucial to fry it to give it flavour. That's why we've whipped up this Asian noodle dish, where we fry tofu in soy sauce and sweet chilli sauce and serve it with veggies and noodles. Enjoy!

Directions

1. Cook the noodles according to the packet and let them drip off in a colander while you prep the rest. We suggest mixing them with a little bit of olive oil to keep the noodles from sticking together. Roast the sesame seeds on a dry pan and set aside.

2. Dice the tofu and cook in olive oil for a few minutes. Add soy sauce, but be careful it doesn't burn. Add sweet chilli sauce. Switch off the hob and prep the veggies.

3. Wash the bell pepper, remove the seeds and cut into strips. Split the cauliflower into florets. Peel and halve the onion and cut into thin strips. Finely chop the garlic. Rinse sugarsnap peas and bean sprouts.

4. Cook onion and garlic in a bit of olive oil in a wok or deep pan. Flash fry the veggies for about 5 minutes - you want them to still be crunchy. Now mix noodles, tofu and veggies together in the wok and switch off the heat.

5. Mix all the ingredients for the marinade in a bowl. If the honey is tricky to stir out, you can give the marinade 10 seconds in the microwave. Remember that hard plastic bowls cannot go in the microwave. Season to taste with salt, pepper and more soy, lime or honey, if you like.

6. Now mix the marinade with noodles, chicken and veg and serve with some extra sweet chilli sauce and soy sauce for those who want it.

Tip

Tasks for kids in the kitchen: Let your kids clean the bell pepper and cut it into thin strips. They can also pluck the broccoli into florets.
