Fastelavn buns with brunsviger filling

Alright, we're going a bit more foreign than usual today - but we had to! Fastelavn is like our Halloween, but not as spooky... And with better treats! So don't you worry about pronouncing Fastelavn or Brunsviger one bit, let's just get them made so you can try them. Enjoy!

Directions

1. Dice the butter and let it soften.

2. Warm the milk to lukewarm in a pot or the microwave. Mix milk, yeast and sugar in a bowl. Add the egg and whisk well. Now add half of the flour, the softened butter and vanilla sugar, and mix until you have an even consistency. Add the remaining flour little by little, and knead until the dough lets go of the bowl. Let the dough rest under a cloth for about 45 minutes.

3. Meanwhile, make the filling. Whisk egg and corn flour in a pot. Whisk the very best you know, so not a single lump remains. Add milk, vanilla sugar, demerara sugar and salt, and bring to the boil. As it approaches the boiling point it will thicken up, and you'll need to whisk like you're competing for a month of paid holiday! Let boil (while still whisking!) for about 30 seconds. Remove from the hob and let cool. You can even pop it outside for a minute, to speed things up a bit.

4. Melt the butter in a pot and switch off the hob once it's melted. Mix with brown sugar. Let cool while you get the rest ready.

5. Halve the dough, and roll out each half on a floured tabletop, into two squares about the thickness of pizza bases. Now cut each piece into nine squares. Pop a teaspoon of the Brunsviger (your buttery brown sugar) and a good dollop of custardy cream in the centre of each square - but keep in mind that you'll need to be able to seal the dough around it. Now fold the sides together to make a little parcel. Give the seams a good press all around, and place the buns seams down on a sheet tray with baking parchment. Use your hands to flatten the buns ever so slightly, and get them nice and round. Let the buns prove under a cloth for about an hour.

6. Preheat your oven to 185 degrees convection, and bake the buns for 10-15 minutes, or until gorgeously golden on top. Let cool.

7. Mix powdered sugar with a tiny bit of boiling water. Be careful not to add too much water initially. Spread a bit of icing on top of each bun, then top with sprinkles of your choice.
