Energy balls with hazelnuts and liquorice

  • 100 gramshazelnuts
  • 250 gramsdried organic apricots
  • 1.5 tbspliquorice powder

These energy balls are perfect as snacks in packed lunches, or for some extra energy when the blood sugar drops in the afternoon, during activities, etc. They're filled with dried apricots, hazelnuts and liquorice powder, which can be found in most larger supermarkets. Enjoy!

Directions

1. Finely blend hazelnuts in a food processor or mini chopper. Set a tablespoon or two aside, to roll the balls in when they're done. Add apricots and liquorice powder and blend until you have a sticky and uniform mixture. This takes about 3-5 minutes.

2. Shape little balls from the fruit mixture and roll them in the blended hazelnut you set aside. Store them in an airtight container in the fridge. And remember that they need to cool down before you and the kids eat them - otherwise they're too soft.

3. Enjoy!

Tip

Tasks for kids in the kitchen: Let your kids help roll the balls and cover with the hazelnuts.

You can use non-organic apricots, but the organic ones aren't artificially "bleached", and are often softer and juicier than the very orange ones. And remember to be patient when you're blending! In the beginning it all just becomes crumbs, and you might think it'll never gather into a mixture! But trust us, it will - it just takes some patience.

If the mass after five minutes on full whack in the food processor still hasn't come together, you can add a teaspoon of water at a time, until it becomes uniform.
