Easy tomato soup with wholewheat pasta

  •  wholewheat pasta
  • 4 canchopped tomatoes
  • 400 mlwater
  • 70 gramstomato purée
  • 2 cubevegetable stock
  • 250 mlsingle cream
  •  salt
  •  pepper

This tomato soup is fantastic for the busier days. It's easy to make and absolutely delicious. As an added bonus, canned chopped tomatoes count as one of your 5 a day, so this soup is also great for covering the kids' veggie needs. Enjoy!

Directions

1. Boil a handful or two of pasta, following the instructions on the packet.

2. Bring chopped tomatoes, water, tomato purée, and crumbled vegetable stock cubes to the boil in a pot. Blend the soup with a hand blender until smooth, and add the cream. Reheat and add salt and pepper to taste, if you fancy it.

3. Serve the tomato soup in bowls or deep plates with a smidge of wholewheat pasta. If you have a fresh tomato or two in the fridge, you can chop it and use as a lovely topping, perhaps along with some fresh herbs such as basil, chives, parsley or similar. Do avoid herb sprinkles if you're cooking for kids younger than 3.
