Easy leek and beef pot - for two days

Ingredients

( 2 adults and 2 kids )

  •  wholegrain rice
  • 800 gramsbeef mince
  • leek
  • 1 tbspcurry
  • apples
  • 250 mlsingle cream
  • 200 mlwater
  •  pickled beets
  •  olive oil
  •  salt
  •  pepper

This dish smells like childhood! At least here at Mambeno. And despite the few ingredients, it tastes amazing! Here we've served the dish with rice and beets. The recipe is for two days, so remember to save the leftovers for tomorrow, where dinner will be extra easy. Enjoy!

Directions

1. Cook the rice according to the packet.

2. Cook the beef in some olive oil in a pot or deep pan and add cleaned, sliced leeks and curry. Let the lot cook for approx. 5 minutes, until the meat is seared well.

3. Rinse the apples and grate on the rough side of a grater, and toss in the pot to cook. Add single cream and water and let simmer for another 5-10 minutes, and season to taste with salt and pepper.

4. Serve the dish with piping hot rice and pickled beets.
