Easy chickpea pot with curry and tomatoes

Ingredients

( 2 adults and 2 kids )

  •  wholegrain rice
  • onion
  • 1 clovegarlic
  • red bell pepper
  • 0.5 tbspred curry paste
  • 20 cherry tomatoes
  • 2 tinchickpeas
  • 400 mlcoconut milk
  •  salt
  •  pepper
  •  olive oil

This is a super simple and tasty vegetarian dish with chickpeas, green bell pepper and cherry tomatoes, in a kid-friendly sauce with coconut milk and curry paste. We're serving it over rice, to make it a bit easier to swallow for the less chickpea accustomed among us. Enjoy!

Directions

1. Cook the rice according to the packet.

2. Dice onion, garlic and bell pepper. Sautée the lot in some olive oil in a pot or deep pan, until the onions are clear.

3. Add curry paste and stir well. Rinse and halve tomatoes, and add along with chickpeas and coconut milk. Let the lot simmer with the lid on until the rice is ready. Season with salt and pepper - and more curry paste, if needed.

4. Serve the yummy curry over piping hot rice - and enjoy!

Tip

Tasks for kids in the kitchen: Let your kids help halve the tomatoes and dice the bell pepper.
