Doughnut ice cream with Greek yoghurt and persimmon

  • 300 mlgreek yoghurt
  • 1 tbspacacia honey*
  • 0.5 tbspvanilla sugar

They might look like classic doughnuts, but as always, we shouldn't judge a book by its cover! These are really the yummiest fruit ice cream treats - made from persimmon, dipped in Greek yoghurt and topped with sprinkles. They're a great snack or dessert, and not nearly as sinful as regular doughnuts or classic ice cream. If you can't find persimmon, you can use peaches instead. Enjoy!

Directions

1. Slice the fruits, with the slices about 1 cm thick. Cut a hole in the centre of the slices, so they're in the shape of doughnuts. Pop the slices on a plate lined with baking parchment and pop them in the freezer for an hour.

2. Mix Greek yoghurt, honey and vanilla sugar. Dip the cold fruit slices in the yoghurt and sprinkle with your favourite sprinkles. Pop the slices onto some more baking parchment, and freeze for 4-5 hours.

3. And it's finally time for dessert!

Tip

Tasks for kids in the kitchen: Let your kids help dip the slices in the yoghurt and sprinkle on the, well, sprinkles!
