Curry mayo

  • 1 tspcurry
  • 100 mlskyr*
  • 50 mlmayonnaise
  • 0.5 tbspacacia honey*
  • 0.5 tbspsweet mustard
  • 0.5 lemon
  •  salt

A great way of getting some veg into the youngest members of the family is to cut them into sticks and serve with a tasty dip. This curry mayo is a hit with most kids and goes great in the lunchbox.

Directions

1. Roast the curry on a pan until fragrant.

2. Mix the curry with skyr, mayonnaise, honey and sweet mustard. Try to work out how much curry you like in your mayo. Season to taste with salt and some lemon juice and a bit more curry if you prefer it on the stronger side. Leave the mayo to sit for a minute so the yellow colour gets nice and vibrant.

Tip

If you want even more flavour in the mayo, you can add half a clove of grated garlic.
