These courgette are a great alternative to crisps in the kids packed lunches, or make for a great late afternoon snack if you're wanting to avoid sugar. Crispy, breaded courgette slices with oregano and parmesan. Enjoy!
Directions
1. Preheat your oven to 200 degrees convection.
2. Rinse and slice the courgette into 1 cm thick slices. Mix breadcrumbs, salt, oregano and pepper on a flat plate. Crack the egg into a deep plate and beat.
3. Coat the courgette slices in the egg, then the breadcrumbs, and place on a baking sheet lined with baking parchment. Sprinkle grated parmesan on top. Bake the courgette slices for 20-25 minutes - until crispy and golden.
