Bruschetta with tomato, bell pepper and fresh basil

  • tomato
  • snack pepper
  • 0.5 bunchfresh basil
  • 1 clovegarlic

Bruschetta is the perfect appetiser, tapas or addition to your grill menu. Here's a crispy take with tomato, bell pepper and fresh basil. Enjoy!

Directions

1. Slice the bread, and brush each slice with olive oil on both sides. Grill the bread until nicely golden and with stripes on both sides. Keep an eye on it - things suddenly happen fast here. If doing your bread in the oven, it'll need 5-10 minutes at 220 degrees fan assisted, until it has a lightly brown surface, but still with a soft centre.

2. Wash and finely dice tomatoes and bell pepper. Chop basil. Mix the lot well with salt and pepper.

3. Crack a clove of garlic and rub on the bread. Top with your tomato mix.

4. Serve the warm bruschetta as an appetiser, tapas or addition to your grill menu.

5. Enjoy!

Tip

Tasks for younger kids in the kitchen: Let your kids help dice tomatoes and bell pepper. They can also mix the salsa.
