Bolognese with spinach and corn

  • onion
  • 1 clovegarlic
  • 500 gramsbeef mince
  • 200 gramsfrozen spinach*
  • 1 canloose sweetcorn
  • 1 canchopped tomatoes
  • 1 cubebeef stock
  • 1 tbspdried oregano
  • 0.5 tbspdried thyme
  •  wholewheat pasta
  • 50 gramsgrated cheese
  •  salt
  •  pepper
  •  olive oil

Bolognese is a certain hit in our house - and at this stage we've made the family classic in about a million different versions. Here is a delicious take with spinach and loose sweetcorn, which is super tasty. Enjoy!

Directions

1. Finely chop onion and garlic. Sautée onion and garlic in a pot or deep pan in a bit of olive oil for a couple of minutes. Add the mince and let it sear. Now add the frozen spinach and drained loose sweetcorn, and sautée for another few minutes until the spinach is thawed.

2. Add chopped tomatoes, crumbled stock cube, oregano, thyme and an optional dash of water, if it needs moisture. Let the lot simmer for 10 minutes or more, if you have time - the bolognese only gets better the longer it gets to snuggle up on the stove.

3. Meanwhile, cook the pasta in plenty of salted water.

4. Season the bolognese to taste with salt and pepper, and serve with pasta and grated cheese on top - and if you have some basil or other herbs knocking about, you can use it for garnish to finish.
