Beef patties are a sure winner here in the Mambeno home! Here we've served the classic with potato salad, sugarsnap peas and cherry tomatoes - and a yummy herb dressing. Enjoy!
Directions
1. Cook the potatoes in salted water until tender when poked with a fork. This takes about 15 minutes depending on the size. Then blanch with cold water.
2. Rinse sugarsnap peas and tomatoes and cut into smaller pieces. Finely chop basil and chives and save half for the dressing. Mix the veggies with half of the herbs, some oil, and potatoes in a bowl. Season to taste with salt and pepper.
3. Shape the beef mince into patties and season with salt and pepper. Cook the patties on the grill if weather permits, or on a pan over medium heat in a mix of butter and oil. Remove from the pan and cover, until it's time to serve them.
4. Mix creme fraiche with the rest of the chopped herbs and mustard -and season to taste with salt and pepper.
5. Serve the juicy patties with potato salad and dressing.
6. Enjoy!

Tasks for kids in the kitchen: Let your kids cut tomatoes and sugarsnap peas. They can also shape their own patty.
