Arabian meatballs with bean hummus and bulgur salad - for two days

Ingredients

  • onion
  • 2 clovegarlic

  • 2 tbspcumin

  • 0.5 bunchparsley
  • 800 gramsbeef mince
  • 2 tbspbreadcrumbs
  • 2 tspsalt
  •  olive oil
  • Bulgur salad
  •  bulgur
  • 0.5 bunchparsley
  • 0.5 bunchfresh mint- or dried
  • 0.5 cucumber
  • radish
  • 0.5 melon
  • tomato
  • 50 gramsblack olives
  • 100 mlskyr*
  •  hummus
  •  dressing of your choice

These Arabian meatballs are super tasty - with beef mince and delicious herbs. We're serving them with bulgur salad and hummus. You can make your own by clicking the chefs' hat in the ingredient list. Remember to save half of the meatballs for tomorrow. Enjoy!

Directions

1. Cook the bulgur according to the packet, then blanch with cold water and leave to drip off.

2. Pop onion, garlic, curry paste, cumin, egg and rinsed parsley in a mini chopper or food processor and give it a whirl, until finely chopped. Stir the onion mix into beef mince along with breadcrumbs and salt.

3. Mix everything well, until you have a firm farce. You can add more breadcrumbs or some flour if it's too moist, or an egg, if it needs more starch. Cook a little test-ball to taste.

4. Cook the meatballs in some oil until golden.

5. Finely chop rinsed parsley and mint for the salad in a mini chopper or food processor - or use your favourite knife! Rinse and dice cucumber, radishes, melon and tomatoes. Mix everything with bulgur, black olives and dressing of your choice.

6. Serve the meatballs with the yummy bulgur salad, creme fraiche and hummus for dipping.

7. Velbekomme!

Tasks for kids in the kitchen: Let your kids help dice melon, tomatoes and radishes and mix the salad.
