It's dead lovely when the whole family, including the kids, can say cheers with a glass of something festive. Here's a thirst quenching mock-jito with lime, mint and citrusy sparkling water. Enjoy!

Directions

1. Slice rinsed lime and place in a bowl or mortar. Pick mint leaves and add along with syrup, and mash the lot well – if not with a pestle, then with a wooden spoon – so the mint leaves and lime give off flavour and juice.

2. Add sparkling water and mix gently, so the bubbles don't fizzle out.

3. Serve with plenty of ice cubes (or crushed ice, for the proper cocktail look) and straws.

4. Enjoy!

Tip

Tasks for younger kids in the kitchen: The kids can just about make this drink by themselves! At least let them slice the lime and pick mint leaves. They can also happily mash juice and flavour out of the mint and lime with a mortar or spoon.
