Tacos with beef and veg

Ingredients

( 2 adults and 2 kids )

  • onion
  • 500 gramsbeef mince
  • 300 gramscarrots*
  • 200 mlwater
  • 1 cubebeef stock
  • 75 gramsgrated cheese
  • 0.5 iceberg lettuce
  • 10 cherry tomatoes
  • 0.5 cucumber
  •  ketchup
  •  taco sauce
  •  taco shells
  •  olive oil
  •  salt
  •  pepper

Taco shells with beef is a new classic in most families with young kids. Let the kids assemble their own favourite taco, open wide and see who can eat an entire taco without it breaking in half! Enjoy.

Directions

1. Finely dice the onion, put half of it a side and cook the other half in a bit of olive oil on a pan until slightly browned. Add beef and let cook while stirring, until the meat is seared well.

2. Peel and grate the carrots on the rough side of a grater, add to the beef mix and stir well.

3. Add water and stock cube and let simmer for 5-10 minutes, or ideally longer, if you have the time. Season with salt and pepper.

4. Grate the cheese, if you didn't buy it grated at the supermarket, and cut the lettuce into strips. Dice tomato and cucumber and pop the lot onto the table in little bowls along with meat, the rest of the onion, ketchup and taco sauce. Heat the taco shells according to the packet, let the family assemble their favourite taco and open as wide as you can!

Tip

You can absolutely buy grated cheese at the supermarket, but it's much cheaper to buy a solid piece of cheese and grate it at home, cut into cheese sticks for the kids' lunch, and cut a few slices off for a nice afternoon toastie. And that keeps those nasty E-numbers off your dinnertable!
