We've done a lot of versions of bolognese, and for this version we've smuggled in some finely chopped celeriac, that even the most veggie-averse kids will never notice! We're serving it with pasta and topped with parmesan cheese, of course. Remember to save half for tomorrow. Enjoy!
Directions
1. Finely chop onion and garlic. Peel the carrots for the bolognese, and grate on the coarse side of a grater. Rinse the celeriac well, and cut into chunks, then give it a good spin in a mini chopper or food processor.
2. Sautée onion and garlic in some olive oil for a few minutes. Add the grated carrot, celeriac and paprika, and sautée for another couple of minutes. Then add mince and let it sear. Add chopped tomatoes, tomato purée, pesto, dried oregano and water, and let simmer for 15 minutes - or longer, if you have time. Season to taste with salt and pepper.
3. Cook the pasta in salted water - make a double portion, if you want to avoid cooking more tomorrow. Peel and cut carrots into sticks for snack veggies.
4. Serve the pasta with bolognese, grated parmesan on top and carrots on the side.
5. Enjoy!
Tip
Tasks for kids in the family: Let your kids help peel and cut up the celeriac. They can also peel and cut the carrots for snack veggies.
