This week's tips from Mambeno

Monday we’re back to reality – we’re easing in with warm pitas, filled with chicken, egg and loads of veg, to give you and your family a healthy start to the year, resolution or not! See if you can find wholewheat pitas at the supermarket.

Tuesday is veggie day – look forward to our yummy chickpea pot! Made with coconut milk and curry paste and served over rice, to help the dish go down well with even the chickpea averse. 

Wednesday it’s time for yummy seasoned skewers. We’ve used beef mince, but if you’d prefer a leaner version, you can use chicken instead. Remember to save the leftovers for Thursday, where they’ll become filling in wraps.

Friday we’re finishing off with a Danish classic: Fried pork! Because even in January, you should be able to feel when it’s Friday. We’ve fried the pork in the oven, so it releases a bunch of fat and gets super crispy.
