- 200 gramsrice noodles
- 2 leek
- 4 stickcelery*
- 500 gramspork mince
- 1 clovegarlic
- 3 cmfresh ginger
- 1 organic lime
- 300 gramscarrots*
- 4 tbsosoy sauce
- 4 tbspsweet chilli sauce
- 4 tbspfish sauce
- 100 mlwater
- olive oil
- salt
- pepper

Here you'll get the recipe for a super easy Thai dish with pork mince. We're serving it with leeks, celery, ginger, lime and rice noodles. Enjoy!
Directions
1. Place the noodles in a bowl and cover with boiling water. Leave to soak for about 10 minutes. Drain the noodles in a colander and rinse with cold water. Then mix the noodles with a dash of olive oil, to keep them from sticking.
2. Chop tops and bottoms off the leeks, and cut into smaller rings. Rinse the celery, halve the sticks lengthways and cut into small chunks. Sautée both in a pot with some olive oil. Add pork and stir well until seared. Add pressed garlic, grated ginger and lime zest.
3. Peel the carrots and grate on the rough side of a grater. Add the carrots along with soy sauce, sweet chilli sauce, fish sauce and water. Season to taste with salt, pepper, and the juice from the lime.
4. Add noodles, mix everything well and optionally garnish with carrot strips, made with a potato peeler, on top. Enjoy!
Tip
Tasks for kids in the kitchen: Let your kids help chop the celery. They can also help taste the sauce.
