Bacon wrapped turkey breast baked on bed of veg - day two

Ingredients

  •  wholegrain rice
  •  leftover turkey bake
  •  lettuce of your choice
  • 0.5 cucumber
  • tomato
  • 125 gramsgreen asparagus
  •  dressing of your choice

Today you simply need to heat up the leftovers from yesterday's turkey bake and make a quick and easy salad. Enjoy!

Directions

1. Cook the rice according to the packet.

2. Heat up yesterday's leftover turkey bake in the microwave, oven or in a pot.

3. Rinse the lettuce, cucumber and tomatoes and cut everything into bite-sized pieces. Snap off the bottom bits of the asparagus and chuck them in the bin. Blanch the asparagus in rolling boiling water for 30 seconds, then rinse with cold water and cut into bite-sized pieces. Mix the lot for a quick salad.

4. Serve the leftovers with rice, salad and some dressing on top.

5. Enjoy!

Tasks for kids in the kitchen: Let your kids cut tomatoes and cucumber into smaller pieces.
