Sausage mix isn't as widespread in the UK as in the more sausage-loving part of the continent - but it's a delicious twist on the German currywurst, and a great way to use up cooked potatoes, if you have a handful left over from the day before. And we've supplemented it with plenty of snack veggies on the side!
Directions
1. Dice the onion and chop up the potatoes and sausages. First, cook the onion in a dash of olive oil on a large pan for a couple of minutes. Then add potatoes and sausage and let the lot cook for 10-15 minutes - until the spuds and sausage have gotten some colour in their cheeks!
2. Stir as you go, and finally add curry, salt and pepper to taste.
3. As sausage and spuds simmer on the pan, you can fix up the snack veggies. Peel the carrots, rinse the cucumber and cut both into sticks. Rinse and clean the mini peppers and cut into bite-sized chunks.
4. Serve the sausage mix with ketchup, a dash of curry sprinkled over, and snack veggies on the side.
5. Enjoy!
Tip
Tasks for kids in the kitchen: Let your kids cut up spuds and sausage - they can also help plate snack veggies on a tray or in small bowls.
