Tasty rice pudding pancakes with lemon zest

Ingredients

( 2 adults and 2 kids )

  • 300 gramscooked rice pudding
  • egg
  • 1.5 tbspsugar
  • 1 tspvanilla sugar
  • 0.5 organic lemon
  • 1.5 tbspplain flour
  •  butter
  •  apple compote

These pancakes are super easy to make, and make a yummy dessert and a slightly sinful snack. We've made these with our rice pudding, but you can use other leftover pudding or porridge. Enjoy!

Directions

1. Mix rice pudding, egg, sugar, vanilla sugar and lemon zest in a bowl. Add flour, and mix everything well to an even mass.

2. Cook the pancakes in butter over medium heat on a teflon pan. You can fit 3 or 4 on a pan.

3. Serve the pancakes with our apple compote - or whatever you like best.

4. Enjoy!

Tip

Tasks for kids in the kitchen: Let your kids zest the lemon into the dough and mix the dough - and they're definitely the best taste testers for the first pancake off the pan!
