This is the super easy recipe for day two of our tasty sweet potato, chickpea and curry stew served with pork chops. On day two we serve the dish with rice. Enjoy!
Directions
1. Boil the rice following the instructions on the packet. Reheat the leftover stew from yesterday in a pot or in the microwave.
2. Peel the carrots and cut them into sticks for snack veggies.
3. Voila - dinner is ready. Enjoy!
Tip
You can also use the leftovers as filling in delicious wraps with plenty of veg and some sweet chilli sauce, which is also delicious!
