Ingredients
Freezer friendly( 2 adults and 2 kids )
- 1 onion
- 1 clovegarlic
- 1 yellow bell pepper
- 1 green bell pepper
- 300 gramscarrots*
- 2 canchopped tomatoes
- 70 gramstomato purée
- 2 tbspacacia honey*
- 1 cubevegetable stock
- 175 gramschorizo- or similar
- wholewheat pasta
- grated parmesan
- salt
- pepper
- olive oil

This is a super quick and delicious pasta dish, that our kids just love! The sauce is made up of tomatoes, carrots, and not least chorizo sausage, which can be bought whole in most supermarkets, and which gives the dish a lovely edge to the flavour. Enjoy!
Directions
1. Finely chop onion and garlic. Wash the bell peppers, remove the seeds and roughly dice them. Peel the carrots and dice them along with the chorizo.
2. Sautée onion and garlic for a few minutes with some olive oil in a pot. Add carrots and continue to cook for a few minutes. Add the chopped tomatoes, tomato purée, acacia honey, stock cube and chorizo. Let the sauce simmer while you boil the pasta following directions on the packet.
3. Finally add the bell pepper to the chorizo sauce and add salt, pepper and maybe a bit more honey to taste, and serve atop the warm wholewheat pasta, sprinkled with some grated parmesan.
